MISSION

Jill Severson founded Bluebird Bakery in October 2019 on a few guiding principles - quality ingredients, freshness of product and supporting the local and regional community. Joining a small community was one of the reasons Jill moved to Sandpoint, so it was important for her to establish relationships with local and regional farmers and vendors where she could obtain quality products. Bluebird's commitment to freshness of product is demonstrated by daily bakes which come out of the oven within an hour and a half of opening, so customers enjoy fresh pastry and bread.

ABOUT

Before opening Bluebird Bakery's storefront, Jill baked bread out of her home for the Sandpoint Farmer's Market. Prior to moving to Sandpoint, Jill lived in Glacier View, Alaska where she worked as a pastry Chef at Majestic Valley Wilderness Lodge and Heli Ski. Before moving to Alaska, Jill lived in Seattle for over a decade working in the in the fine dining industry, artisanal baking and hospitality at Mistral Kitchen, The Essential Baking Company, and The Fairmont Olympic Hotel.

Jill was born in Thousand Oaks, California and holds degrees from The French Culinary Institute in Pastry Arts and International Culinary Center in Bread in New York City. While attending The French Culinary Institute, Jill worked at Jaques Torres Chocolate Haven in Manhattan. She moved to Sandpoint to be closer to nature, join a smaller community and pursue a more balanced quality of life. When she is not at the bakery, she is snowboarding, boating, camping and spending time with family and friends.
